Mascarpone peciva/Mascarpone pastry

Pa kad imamo Mascarpone sir moramo ga negde i utrositi :)))

Potrebno:
1 kg brasna
500 ml slatke pavlake
500 gr mascarpone sira
300 ml mleka
2 kasicice suvog kvasca
2 kasicice soli
1 kasicica secera


Priprema:
U vecoj ciniji pomesati brasno, suvi kvasac, secer i so pa dodati tecnu slatku pavlaku i mascarpone sir. Na kraju lagano sipati toplo mleko pa umesiti meko testo. Staviti testo u lagano podmazanu ciniju, prekriti kuhinjskom krpom pa ostaviti da "odmori", na toplom mestu, oko 45 minuta. Nakon toga istresti testo na radnu povrsinu posutu sa malo brasna, premesiti pa ostaviti na toplom jos 30 minuta.
Zagrejati rernu na 220 stepeni. Nadoslo testo se moze razvaljati oklagijom pa oblikovati kiflice, puzici i slicno ili se mogu oblikovati zemicke tako sto testo podelite na male, jednake, delove pa svaki oblikujete u malu lopticu. Dobijene loptice slagati u pleh, na papir za pecenje pa peci 15 minuta u rerni zagrejanoj na 220 stepeni. Nakon toga smanjiti vatru na 200 stepeni pa peci jos 10 minuta i na kraju smanjiti na 180 stepeni. Peci dodatnih 10-ak minuta.
Pecena peciva izvaditi iz rerne, blago poprskati hladnom vodom pa ostaviti 5 minuta u plehu a zatim ih uviti u kuhinjsku krpu i ostaviti da se ohlade.

Ovo je ogromna kolicina testa pa ako nemate jaaako brojnu porodicu preporucujem da probate sa polovinom sastojaka :)

Mascarpone pastry
(recipe adapted from here)

1 kg all purpose flour
500 ml heavy cream
500 gr Mascarpone cheese (You can use homemade Mascarpone chesee)
300 ml milk
2 teaspoons active dry yeast
2 teaspoons salt
1 teaspoon sugar

In a large bowl stir together the flour, dry yeast, sugar and salt. Add liquid heavy cream and Mascarpone cheese. Gradually stir in the lukewarm milk and knead until you have a soft dough. Place the dough in a lightly greased bowl, cover with a clean dish towel and place in a warm spot to rise about 45 minutes. After dough has risen, remove from bowl and place on a lightly-floured board. Knead one more time and again left to rise for 30 minutes.
Preheat the oven to 220 degrees C. Now, you can make different types of pastry or you can divide dough into small, equal, pieces and form each piece into a small round ball. Place on a parchment lined baking sheets.
Place the baking sheet in the preheated oven and bake for 15 minutes on 220 degrees C. After 15 minutes reduce temperature to 200 degrees C and bake for 10 minutes and for last 10 minutes bake at 180 degrees C.
Remove the baked buns from the oven, sprinkle with cold water and leave 5 minutes in baking sheets. After that, wrap in a clean dish towel and allow them to cool on a rack before serving.

You will get a lot of dough so you can try with half part.

  4. Peciva su fina, imaju neki poseban smek od mascarpone sira... Ako se odlucite da ih probate savetujem polovinu smese jer ih stvarno bude mnoooogo :)
